SCD Pancakes



I made these pancakes following a recipe at NoMoreChrohns.com: Jim's Fluffy Pancakes.

Mine don't seem to turn out very fluffy, but they are delicious nonetheless! Great topped with peanut butter and honey.

Hi, Dan! Thanks for the comment! (I'm saying that here in case you didn't see my reply :) ).

These pancakes are fantastic, but I too have found that they don't always come out very fluffy. When I make them, I sometimes I press them with the spatula a little too much, and they get flat like that. It also depends on how long I whip the ingredients in the blender.

Hi there, Just found your blog. The minty peas & Lamb sounds yummy! As to the flat pancakes - no worries. The trick is to only just mix the ingredients - the batter should be a bit lumpy. Don't squish with the spatula. And lower the heat a bit. I always make a little test-pancake first. ;)
I love pancakes with thick, Balkan-style yogurt and berries.You can also thin out the batter and make crepes.
